Ingredients:
1/4 cup caster sugar
1 vanilla bean, split length ways
300ml Champagne
500g fresh strawberries
Method;
- Place the sugar, vanilla bean and Champagne in a saucepan and warm over low heat. Cook, stirring for 3 minutes, or till the sugar has completely dissolved. Cool slightly.
- Put the strawberries in a serving bowl and pour the Champagne syrup over them, stirring gently to coat. Serve warm or refrigerate till cold, if preferred.
