Ingredients:
2 1/2 lb medium asparagus, trimmed
2 tbsp olive oil
1/4 tsp four blend fresh ground pepper
1/2 cup reduced fat feta cheese, crumbled
1/2 lemon
Method:
- Preheat oven to 205°C.
- Coat asparagus with olive oil. In a large baking pan, spread asparagus out in one layer.
- Roast until tender, approximately 12 minutes.
- Cover with feta and continus to cook for 2 minutes.
- Squeeze lemon juice over asparagus and serve.
